Velveeta Mac N Cheese

Oh glorious macaroni and cheese. All things I love: pasta, cheese, butter… yes please! I love any type of mac n cheese… baked, stovetop, Kraft, goat cheese, cheddar cheese, Velveeta, spicy, whatever! It’s all amazing!! And yes, I even said Kraft… let’s be honest, that powdered cheese in there is something magical; no one can ever recreate that cheese flavor. I think we all love the boxed mac n cheese, it just takes us back to our childhood. I remember several days where I would make it for dinner with a baked potato and I thought I was so awesome (as most of you know, my mom can’t cook at all). Soooooo enough about my love for boxed mac n cheese… time to be a grown up… kind of.
Look at how beautiful that is. Velveeta mac n cheese is really just a step up from the box; still amazing, and almost as simple. Yes, I know, Velveeta isn’t even real cheese, but whoever made it is awesome in my book. 😉 I use Velveeta cheese a lot! And how cool are those new little serving ones?? They really do make life so much easier when you don’t need a 2 pound log. Something I just learned a couple weeks ago… you’re actually supposed to keep unused Velveeta in the fridge!! I may sound stupid, but I really thought you could just put it in the pantry and it’d last. Well good thing I figured that out sooner than later.
Now to the good stuff…….
I always stock up on a ton of different pasta, so I generally just use whatever I have in my pantry. I love to play around and use fun pasta my son will love (he loves them all), but in this case I used good old elbow macaroni.
Just cook the pasta as directed on the box. I always error on the side of less done because as I melt my cheeses in, the pasta keeps cooking and could become mushy.
That is pure Velveeta and cream cheese heaven right there. It’ll take a few minutes and a little elbow grease for the Velveeta to get completely combined, but it’ll all be worth it.
Oh yeah, that was worth the 3 minute wait. Look at that creaminess!!
Velveeta Mac N Cheese

- 1 box prepared elbow macaroni
- 1 lb. Velveeta
- 1/2 block cream cheese
- 1 stick butter
- 1/2 cup whole milk
- 1/4 cup water
- Salt & pepper to taste
- Prepare pasta as directed on box and drain.
- Cut Velveeta and cream cheese into 1 inch cubes.
- Cut butter into 4 sections.
- In large pot, combine pasta, Velveeta, cream cheese, butter, milk, water, salt, and pepper.
- Allow everything to melt.
- Serve & Enjoy!
- You can use whatever type of pasta you want. Some of my favorites for mac n cheese are: penne, fusilli, orecchiette, cavatappi, rotini.
- I add extra water to the sauce to help thin it out some... Velveeta is super thick and creamy. It tastes good with or without water.
